Ingredients

10 frozen turnover dought for frying
8 oz mozzarela
1 canola oil

Directions

The dough must be thawed for a long time this is important because if not, it will not stick/close together.

Add a moderate amount of chese

Wrap it and give it a nice empanada shape.

Heat the cooking oil in a small dutch oven use plenty of coal to get it hot until it is ready to fry this can take 15-20 minutes.

Fry two at a time. when one side turns golden brown flip it and then remove when both sides are golden. repeat the process until they are all fried and enjoy!

12 eggs
3 tbsp unsalted butter
0.50 lb Ham
0.50 cup milk
0.50 tsp salt

Directions

This is a very easy breakfast choice. The most imporant ingredient is butter use a high quality butter for this.

chop your ham it can also be squared cubes.

whisk really well 12 eggs your milk and salt.

melt the butter and cook your ham for about 5 minutes.

Add the egg mixture and stir it very well so that the butter from the ham is all over the eggs.

close the lid add about 6 coals on top and 8 below. open the lid and check it every 5 minutes for me it took 20 minutes for the egg to bake it will surprisingly rise up like a cake. Don’t over cook it!

8 oz mozzarella
0.50 tsp complete seasoning
2 tbsp butter
2 cloves of garlic
3 boiled eggs
1 white onion
1 package instant mashed potatoes
2 lbs ground beef
2 tbsp olive oil

Directions

This recipe requires you do make mashed potato on the side and is quite simple. For simplicity I use the instant mashed potatoes just follow the instructions on package.

chop onion and garlic and fry it on the pan with olive oil until the pnion is transparent. use a significant number of coals to make it hot.

Mix beef with complete season and add to the pot until brown.

Boil 3 eggs and slice them

After the beef is brown and cooked (taste it) layer on top the eggs evenly and add the layer of mashed potatoes.

layer your mozzarella cheese on top of the mashed potatoes.

Place about 14 coals on top and 12 on the bottom everything is pretty much cooked already you are just making it for 20-25 minutes.

1 cup all purpose flour
1 cup yellow cornmeal
cup sugar
1 tsp salt
cup melted butter
1 egg
1 cup milk
3.50 tsp baking powder

Directions

This is a very basic and fun recipe to bake.

Mix all the flour, cornmeal, sugar, salt and baking powder. whisk it well.

Make a hole in the center and throw in your egg and melter butter.

Stir the mixture together until there are little or no lumps remaining. taste it, it should be semi sweet and delicious.

10 coals under and 12 on top I would recommend the smaller dutch oven but in this example I used the medium.

Ready is 25-30 minutes. Enjoy!

2 cups all-purpose flour
1 zip lock bag

This is a very standard recipe for pancakes made from scratch. For convenience you may also use ready to go pancake mix but I like to do it the hard way plus made from scratch pancakes taste 500% better. It’s true!

Pour the baking powder, flour and salt into a zip lock bag and mix it well. Melt you 2 tablespoons of butter.

In a mixing bowl, mix 1 egg and 1.5 cups of milk

Pour the flour mixture into the mixing bowl and stir it will until it is smooth.

Position your lid upside down you can use rocks or bricks. Use a generous number of coals under, the lid has to be hot! Use your vegetable oil and a paper towel to season the lid with oil (I like olive oil) every time you cook a new batch of pancakes so they do not stick it also adds to the flavor. Each pancakes will takes 5 minutes or less flip them every 2-3 minutes.

Serve with any topping of your choice. Enjoy!

This was one of the most challenging recipes and I need to revisit in order to get it just right. It is honestly easier to simply go out and purchase a bucket of chicken from your favorite fast food chicken restaurant but where is the fun in that?

Preparing the chicken for frying is the most complex part of this recipe. In this image I chose peanut oil but canola oil will work better. For best results I suggest using buttermillk over regular milk.

Wash the chicken thoroughly, in this example I cooked only drum sticks but you can also work with thighs.

pour about 12 oz of buttermilk

add pickle juice, half cup of water and vinegar

Mix into large zip lock container for atleast 4 hours the longer the better for best results leave it the refrigerator over night. If you were to cook this at a campout I would transport it like this and follow the remaining steps at the outing.

On a mixing bowl, combine creole seasoning, flour and the garlic/onion powder with salt and pepepr to taste. For the creole seasons I love using Tony Chachere’s.

When the chicken is ready, coat all thoroughly and get them ready to fry.

heat cooking oil use 16-20 coals to get it hot and slowly reduce it once you start frying. I suggest using less oil than the image I learned the most ideal way to fry chicken is for the chicken to only be sumerged halfway and to flip it 1-2 times.

Serve by itself or with sides of your choice.

1 rosemary sprigs
1 lb potatoes
8 oz sliced mushrooms
2 tbsp olive oil
1 garlic clove
2 celery, carrots
½ tsp thyme, basil, oregano, sage
1 chicken seasoning

MEDIUM dutch oven. Cut all veggies and lay down in the pot.

Use a small ot med size chicken. You will need to cut the spine with a kitchen scissor and crush the sternum to fit it into the dutchoven. Coat with chicken seasoning.

Slow cook, 16 coals under 14 above.

Chicken takes quite a bit of time be patient. Try to refrain from opening the lid to prevent heat loss.

Serve with rice or mashed potato. Enjoy!

1 package oven-ready lasagna
1 small container of riccota cheese
1 lb ground beef
½ tsp oregano, all purpose seasoning, basil
2 tbsp olive pil
½ cup red wine (optional)

This is one of my favorite things to cook, no one ever expects lasagna in a campout.

Season your ground beef, I like using high quality organic ground beef.

Brown the ground beef in olive oil. Taste it.

Stir in the two bottles tomato sauce of your choice. If your sauce does not have basil add some here and your optional red wine. After it is cooked in 15-20 minutes seperate sauce into another pot so we can begin to build the lasagna.

You need to add layers layer 3-4 layers in a medium dutch oven. The bottom layer is the sauce followed by the lasagna rectangles.

the next layer is more sauce, riccota cheese and mozzarella.

add another layer of rectangles and repeat.

The top layer is mozzarella and riccota you should have 3-4 layers.

Bake for about 30 minutes 14 coals on top 12 below.

32 oz bag of hash browns
½ onion, red and green peppers chopped
½ lb bacon or sausage
1 tsp freshly ground black pepper
16 oz shredded cheddar cheese

In this example I use bacon and chopped it up. I also scrambled all 12 eggs in a mixing bowl and added salt/pepper to taste. You can manually chop or purchase the veggies chopped fresh or frozen. For better cheese results, I recommend purchasing good quality not the store brand.

MEDIUM pot. Cook protein until brown, The oven needs to be hot I used between 15-20 coals.

Remove bacon and add the onion with pepper for 10 minutes until the onion is translucent

set aside the onion peppers and pour the bag of hashbrowns. You have two options you can fry the hashbrowns until golden for a harder traditional hashbrown texture or you could bake it with the lid for 10 minutes adding 6 coals above. This defrosts the hashbrowns and gives it a texture similar to mashed potatoes.

Pour the eggs, protein and veggies and close the lid for 5-10 minutes.

open the lid and quickly add the cheddar cheese. If like it to be less cheesy only use 8 oz. Close the lid for an additional 10 minutes with 10 coals on top. Make sure the bottom is replenished so it stay hot as it is critical for the potato to bake thoroughly.

23 lbs rump roast
14 russet potatoes
½ chopped onion

Create a sofrito of your choice in this example I simply use garlic, onions, carrots, green pepper and tomatoes in olive oil.

Season the beef to your liking I simply add salt and some complete seasoning. Rump roast has plenty of fat I personally don’t trim much of it as it helps develop a delicious gravy,

MEDIUM dutch oven 14 coals above and 16 below this is a very slow cook. After 45 minutes open the oven and slice the roast in halt before cooking for another 20 mins.

Serve with mashed potatoes or rice or just with those juicy baked potatoes. Enjoy!
