Arroz Con Pollo (Peruvian Recipe)

Classic Peruvian recipe with a unique taste and an unforgettable aroma.

Main Ingredients
 10 chicken drumsticks
 0.75 oz cilantro
 1 fresh parsley
 4 spinach leafs
 1 red bell pepper
 1.50 cups jasmine rice
 1 cup white wine (optional)
 1 chicken rub seasoning
 ½ tsp salt
 1 chopped carrot
 ½ onion
 2 tbsp cooking oil
 2 garlic cloves
 3 cups water
 1 package of frozen green peas
Directions

Chopped veggies, and liquify cilantro. Clean chicken and rub with chicken seasoning.

Chop 1/2 onion and red peppers. wash the rice 2-3 times until the water is not so cloudy.

Cook onion and olive oil over dutch oven heat and brown the chicken this can take 10-15 minutes the chicken is what takes the longest to cook.

Add and stir all remaining ingredients. It's going to look like a soup and the rice will settle to the bottom. You are essentially utilizing the dutch oven as a rice cooker

In this example I used 10 coals above and 16 below which was a little excessive. It does not need to be very hot the less heat the better imho or too much rice will burn and stick to the bottom.
